Craving Okonomiyaki often as I am from Kansai area in Japan:) I arranged much healthier way using Buckwheat instead of normal wheat! Using Chia seed to replacement of egg which makes the pastry stick together.

Ooo I was just thinking that I wanted to make okonomiyaki again soon! Interesting idea using buckwheat flour. I baked bread once with buckwheat flour and it had such a lovely taste and fragrance. I liked it much better than regular wheat bread. So, buckwheat okonomiyaki must be incredible!

Ahh, galettes! I see, very neat! Yes, in my bread I think it was one part buckwheat flour and two parts whole wheat flour, plus yeast, salt and little oil. I also tried a similar bread with barley flour and another with soy flour. All very delicious!
