Basic Soup stock No.1- vegetable skins

When you peel vegetables, what do you do with the peels? Skin of onions? Sad leaves on the cabbage? If you throw this away or in the compost, I have a suggestion for you. Leave the skins and peels in a pan and make a soup broth of it. Soak them together with some kombu overnight and boil them the day after. Sieve the broth and you have a nice broth that you can make soup of. I usually use organic vegetables so the skin and peels don’t contain chemicals either.
