Daifuku is a traditional Japanese sweet, made with adzuki beans and glutenous rice flour dough. Since today is Valentine’s day, I make these special chocolate daifuku. They are vegan, pretty and tasty!
These are what you need:
Glutenous rice flour (you can buy it online or in asian shops)
Chopped dark chocolate
Cocoa powder for garnish
Start by heating the cream on low heat. Make sure you don’t boil the cream but it needs to be hot. Turn the heat off just before adding the chocolate. Mix well till the mixture is shiny and the chocolate has melted.
Pour the chocolate mix on cling film in a dish. Leave the chocolate in the fridge for a while.
Mix the sugar and the flour, add cold water and mix. Heat it up slowly for a few minutes, mixing with a spatchula from time to time. When the dough is sticky and looking shining it’s ready.
Divide the dough and make small balls which you flatten out into round shapes. Coat strawberrys with chocolate and place them with the pointy end of the strawberry facing down. Pinch the sides of the dough and you are almost done. Sprinkle cocoa powder or icing sugar on top of your daifukus.
